AT THE MILL ...


These images, a small tour of the various steps that cross the olives to be transformed into
this "liquid gold" so appreciated by our organization and our palates ....




Upon arrival at the mill, the olives are weighed after being stripped of leaves and branches fell during the harvest.

Then came the transition to wash a toilet that is making them fit and ready to move to the next step.

The crushing olives are with their core. At the mill where we take them the wheel is replaced by a hammer mill and before our eyes (or almost), the olives are transformed into a brown paste and thick.

The step of mixing happens next: it is done cold, at least at a low temperature between 28 and 30 ยบ C.

Last step: the expression that will separate oil from water.

Finally, the oil is decanted to remove residual solids that remain suspended.
